Not Your Average Cranberry Sauce: New Twist To A Classic Holiday Recipe

Cranberries with orange juice & orange peel is a great combination. Cinnamon stick is also a nice optional addition to this cranberry sauce recipe.

Baking cranberry sauce is a clever idea if you're baking other food, or don't have any room on the stove top.

If the reverse is true - no room in the oven - this cranberry sauce recipe is equally delicious cooked in a saucepan on the stove.

Cranberry sauce is traditionally associated with turkey, but we've found that it's perfect in a vegetarian or vegan Thanksgiving menu.

Cranberries are extremely compatible with Squash Pecan Casserole, Vegan Stuffing, or Shepherd's Pie (lacto veg, vegan) - just to name a few of our delicious Holiday Recipes!

We used 1/2 the amount of sugar recommended on the cranberry package. Use more if you like your cranberry sauce sweet instead of tart-sweet. Substitute an equivalent amount of stevia or other low carb sweetener to lighten the glycemic load.

Makes approximately 2 cups cranberry sauce or 12 servings

Nutrition Data Per Serving, based on use of sugar: 67 calories, 13 g carbohydrate, 0 g fat, 1 mg sodium, 1 g dietary fiber, 0 g protein, 10 g sugars, 15% RDV Vit C. Very low in saturated fat, sodium & cholesterol, very good source of Vit. C. Estimated glycemic load: 7.

Cranberry Sauce Ingredients:

  • 12 oz. (1 pkg) fresh or frozen whole unsweetened cranberries
  • 1/2 cup raw cane sugar
  • 1 tsp grated orange peel
  • 1/2 cup unsweetened orange juice
  • Optional: 1 cinnamon stick

Cranberry Sauce Directions:

  • 1. Preheat oven to 350 degrees
  • 2. Sort cranberries, discarding any bruised or decayed fruit
  • 3. Rinse and drain berries

  • 4. Grate the peel from the orange using a fine grater
  • 5. Prepare fresh squeezed orange juice and measure out 1/2 cup
  • 6. In an 8 or 9 inch square baking dish, mix cranberries, sugar, orange juice and orange peel
  • 7. Bake, uncovered, in a 350° regular or convection oven, stirring occasionally, until berries are tender when pierced and juices are syrupy, about 1 hour
  • 8. Serve warm or cool
