Holiday Dessert Recipe: Vegan Butter Tarts

Butter Tarts Are The Perfect Holiday Dessert Recipe!

If butter tarts are one of your pre-vegan favorite desserts, or a comfort food from childhood, you’ll love these vegan butter tarts. I have fond memories of devouring the tarts my Aunt Opal made for us when she came to visit.

Those were the days. I can’t eat sweets like that anymore, and have gone off dairy & egg. But I will always eat several of these delicious vegan butter tarts on special occasions like Christmas - my favorite excuse for eating sugar and fat laden treats!

Tarts are perfect for a holiday buffet, because they qualify as finger food (at least for me), and are much easier to serve than pie or cake, as each tart is an individual serving. They're also easy to store, and freeze.

Vegan butter tarts are easy to make, and you can buy prepared pie crust to save time.

Vegan Butter Tart Ingredients:

Crust:

  • Make one double recipe of vegan pie crust vegan pie crust with 2 Tbsp unbleached cane sugar added.
  • Form it into two 6 inch wide discs, then cover and chill it for at least 20 minutes.
  • Roll each disc out on a floured surface and cut a total of 24 3 3/4 inch rounds using a glass or a cookie cutter.
  • Place in 2 ½ in muffin tins and refrigerate for 15 minutes.

  • 3/4 cup raisins soaked in hot water for 15 minutes and drained
  • 3/4 cup chopped walnuts
  • 2 T Ener G egg replacer mixed with 1/4 cup warm water
  • 3/4 cup rice syrup
  • 1/2 cup brown sugar
  • 2 T cornstarch
  • 1 t vinegar
  • 2 t vanilla extract
  • 1/4 t salt
  • 1/2 cup melted Earth Balance Vegan Buttery Spread

Directions:

  1. Preheat oven to 350 degrees
  2. Sprinkle raisins and walnuts in prepared tart shells.
  3. Using an electric mixer beat egg replacer, maple syrup, vinegar, vanilla, cornstarch, sugar, and salt.
  4. Stir in the melted butter.
  5. Pour filling into the shells.
  6. Bake for 15-20 minutes until the filling is just set and the crust is golden. Cool in the muffin pans.
